Kale Soup
Ingredients (4-6 people):
1 onion
1 large clove of garlic
olive oil
500g kale, finely shredded
500g potato, preferably
floury, chopped
2.5 litres water
1 chouriço, thickly sliced
Preparation:
Peel the potatoes and finely chop the onions and the garlic.
Boil them in a large pan with 1.5 l of water seasoned with salt and half the
amount of the olive oil. In the meantime, arrange the kale leaves, washing and cutting them till
they are finely shredded. When the potatoes are cooked, pulverize them in the
broth with a masher or a handheld blender.
Add the
remaining water and the kale and bring it back to boil, until everything is
cooked. Rectify the salt and add some more olive oil. In the
last few minutes of cooking, add the chouriço slices. Besides the chouriço,
some people serve this soup with corn or rye bread, especially in the North of
Portugal.
This was one the soups we ate at St. Martin’s
