Egg Cake - Pão de ló



Egg Cake
Ingredients:
6 eggs
the weight of 6 eggs in sugar
the weight of 2 eggs in flour
1 teaspoon of baking powder

Preparation:
There are different recipes for this Portuguese cake, varying mostly in the number of eggs used.
First, pre-heat the oven to 180ºC. Then, separate the egg yolks and whites.
Beat the egg yolks with the sugar until you get a creamy mixture.
Add the flour and the baking powder and beat well. Beat the egg whites until they are stiff and fold into the rest of the mixture.
Pour into quite a deep cake tin, lined with plenty of baking paper, and place in the oven.
This cake is traditionally not well cooked in the middle, meaning that you should remove it from the oven before it’s finished in order for the egg yolks to remain a bit creamy.
