Quince Cheese
2 kgs
quinces
1.3 kgs sugar
Water
2 cinnamon sticks
Lemon peel
salt
Preparation:
Peel the quinces and remove all the
seeds. Cut them in chunks. Put them in a pressure cooker, cover them with water,
add the cinnamon sticks, the lemon peel and a pinch of salt. Let the quinces
boil, until they become soft. Drain the quinces and purée them.
Now, boil the quinces with the sugar
in a pan, stirring occasionally so that the sugar dissolves itself. At this
time, cook over low heat. When you are able to run a spoon across the bottom of
the pan and it doesn’t immediately fill with liquid, then it’s done.
Remove from heat and pour it in
bowls. Cover with some baking paper and allow some days to dry. Eat with toast
or cheese and crackers.
